Cassava Cake

Ingredients
  

  • 1 lbs cassava root (½ kg)
  • ½ cup honey
  • 1 small coconut
  • 1 pinch of salt

Instructions
 

  • Grate raw cassava or crush in the food processor.
  • Blend the coconut with 1 cup of water.
  • Mix all the ingredients, adding water if necessary to reach the consistency of cake batter. Taste the dough to check appropriate sweetness.
  • Grease a mold and spread the dough to a thickness of 1-2 inch. (3-5 cm)
  • Bake on medium heat until golden.

Notes

The cake tastes better the next day.
